Cauliflower Mash
The keto mash. Get the water out properly and it's genuinely good, not just a sad compromise.
Ingredients
Makes 4 portions
- 1.00 piece(s) cauliflower , broken into florets
- 40.00 grams butter
- 50.00 grams cream cheese
- 1.00 clove(s) garlic clove , minced

Boil or steam the cauliflower until very soft. About 10 minutes.

Drain very well. Let it steam dry in the colander for 5 minutes.

💡 This is not optional. Watery mash is the number one cauliflower mash failure.

Blitz with a stick blender or food processor with the butter, cream cheese and garlic.

Season generously. It needs more salt than you think.
