Method

1
Mix the softened butter with the garlic and a pinch of salt. Set aside.
💡 Make a bigger batch and roll it in cling film. Keep in the freezer — slice off a round whenever you cook steak.
-
2
Get a heavy pan absolutely screaming hot. Season the steaks generously with salt and pepper.
💡 Take the steaks out of the fridge 30 minutes before. Cold steak = uneven cooking.
-
3
Add the oil. Lay the steaks away from you. Cook for 2-3 minutes without moving them.
⏱ About 3 mins
-
4
Flip once. Cook another 2-3 minutes for medium rare.
⏱ About 3 mins
💡 Press the steak with your finger. Soft = rare. Slight resistance = medium rare. Firm = you've ruined it.
-
5
Rest for 5 minutes on a warm plate. Top with the garlic butter. Let it melt over.
⏱ About 5 mins
💡 Resting is not optional. Cut into it now and all the juice runs out onto the plate.
