Salt and Pepper Pork Belly Bites

- 500.00 grams pork belly , cut into bite-size pieces
- 2.00 clove(s) garlic cloves , finely sliced
- 1.00 teaspoon chilli flakes
- 1.00 tablespoon olive oil

Score the skin of the pork belly pieces if the butcher hasn't already. Pat completely dry with kitchen roll.
💡 Dry skin = crispy skin. This is non-negotiable.

Heat a large pan over high heat with the olive oil. Place the pork belly pieces skin-side down.

Cook for 10 minutes without moving them. The skin needs to go properly crispy.

Flip and cook for another 10 minutes until cooked through.

In the last 2 minutes, add the sliced garlic and chilli flakes. Toss everything together. Season with plenty of salt and pepper.
