  • 500.00 grams pork belly , cut into bite-size pieces
  • 2.00 clove(s) garlic cloves , finely sliced
  • 1.00 teaspoon chilli flakes
  • 1.00 tablespoon olive oil

Method

    Score the skin of the pork belly pieces if the butcher hasn't already. Pat completely dry with kitchen roll.

    💡 Dry skin = crispy skin. This is non-negotiable.

    Heat a large pan over high heat with the olive oil. Place the pork belly pieces skin-side down.

    Cook for 10 minutes without moving them. The skin needs to go properly crispy.
