Courgette and Halloumi Fritters
Crispy outside, squeaky halloumi inside. Perfect with a dollop of soured cream.
Ingredients
Makes 3 portions
- 2.00 piece(s) courgettes , grated and squeezed dry
- 100.00 grams halloumi , grated
- 1.00 piece(s) egg , beaten
- 3.00 piece(s) spring onions , sliced
- 2.00 tablespoon olive oil , for frying

Grate the courgettes. Put in a tea towel and squeeze out as much water as humanly possible.
💡 This is the most important step. Wet courgette = soggy fritters.

Mix the courgette, grated halloumi, egg and spring onions. Season.

Heat oil in a pan. Drop spoonfuls of the mixture in. Flatten slightly.

Cook for 3-4 minutes each side until golden and crispy.
