Cauliflower Cheese
The proper version. Not a sad diet substitute. Enough cheese to make a cardiologist wince.
Ingredients
Makes 4 portions
- 1.00 piece(s) cauliflower , broken into florets
- 200.00 grams mature cheddar , grated
- 150.00 ml double cream
- 30.00 grams butter
- 50.00 grams cream cheese

Preheat oven to 200C. Boil or steam the cauliflower for 5-6 minutes until just tender. Drain well.

Melt the butter in a saucepan. Add the cream and cream cheese. Stir until smooth.

Take off the heat. Stir in three-quarters of the grated cheddar until melted.

Put the cauliflower in an oven dish. Pour the cheese sauce over. Top with the remaining cheddar.

Bake for 20 minutes until golden and bubbling.

Storage
Fridge 3 days. Reheats well.
Reheating
Oven 180C for 10 minutes or microwave. The top won't re-crisp in the microwave though.

Goes with everything. Pulled pork, chilli, roast chicken, or just eat it on its own.
